Hofex 2009 Hong Kong show pieces competition (all pictures I hope )
For me this is a very exciting competition!
For many reasons…
It is an international event even if it is mainly attended by Asian countries
You have many categories and way to compete you can choose from….
Your own theme is welcome…
You can enroll yourself in more than one category if you like…
You can participate as a team…
You could be your country ambassador.
Since my early days in Asia (1989) when I joined the Mandarin hotel Macau, as Pastry chef, I remember going to Hong Kong every two years to visit the Hofex . I was like a kid in a candy store, I remember seeing all those show pieces and competition , it was like a dream for me coming from Europe it was amazing ! I was used to see sugar and chocolate work in Europe but Asia opened my eyes to more food art i.e. Vegetables and fruits carving, Ice carving, butter carving … I do believe the Asian level is very high and have far better finesse and details which could turn some of our European carver jealous.
So we always said the same thing over and over after visiting all the stands, talking with friends and colleagues “Did you see that... Did you see this… if we were not so busy I’m sure we could do it etc…always looking for a good excuse and never looking on how we could compete.
I guess it was a bit of apprehension as well.
Only after that I been invited to be one of the judge for the china preselection the world chocolate master in Shanghai in 2006 that I decided to enroll myself and try my chance in Hofex for the first time, it was in 2007. I strongly believe that if you’re a judge you must have experienced or done some competitions before, it help to understand more and open your view on the overall of the competition you are judging,
It doesn’t mean that if you never make any competition you can not be a good judge but in term of credibility’s, I’m not so sure.
Saying this…. the major point is that when you did put your name on a line you will have to pull all your best to come up with do something good as everybody around from our industry goes to Hofex and look at your work …
