
Well it was an interesting one this year as I came back from the
World Chocolate Masters on 21st at night from Paris, and we
where ready on a next day, early in the morning to deliver our
two show peaces to the Venetian where this event took place on
22nd, not too fresh, but physically there.
We had 3 judges this time : Mr. Hidekazu Kawakami, Mr. Joseph
Caviezel, and Mr. Kenny ng, all very well know pastry chefs in
Asia.
And I must said this year, the level has improved again, with
all these new hotels coming up in Macau and I think it will be
very interesting to see if we can, for next year, put this
competition to an international level. With the live chocolate
competition, I was very impressed with the junior staff from COD
as he did very well, he was on time, and considering his age,
21, well done for his gold medal the theme was Christmas, the
senior staff (Ha Weng ) from the Wynn was under pression after
he realized that after 2 hours work, he will not have enough
time to finish all his show piece, too bad because the idea of
his show piece was great and the work very detailled and thin,
the theme was Aviation.
As for the category show piece, Well done Ha Chu, Ronald (Out of
Africa) superb and to all the contestants, thanks for your hard
work.
Everything went quite smooth this year, we had two entries : one
show piece with cake, the theme for the cake was to use praline
and fruit puree, as for the other entry, it was show piece with
free theme.
Since last year we did 2 silver medals, we were ready for more
this year, but unfortunately, the judges did not think the same
than us, and we finished the day with 2 silver medals again, you
believe it !!!!!!!, I could see the gold, but we could not reach
it, it was a bit disappointment for the cake since we did a lot
of work on it but it’s life, overall, well done to Wilson for
his show piece the chocolate pastry guy (one girl did kiss him
wow, not you, the chocolate man ha-ha…) with the cake from Grand
Lapa Hotel and very good job to my Sous-Chef Kin Man for his
show piece (Japanese cartoon ) from Grand Lapa Hotel, yes I know
the name … for the one who don’t know, we have changed our name
no more Mandarin Hotel, now the name is Grand Lapa and the hotel
is managed by Mandarin Group.
This event was well organized by Ms Wendy so (Operations Manager
) and we did meet as well Ms Wendy Lim (senior manager) who told
us next year it will be bigger and wow so let‘s invite you all
for the WGA 2010 for a very exciting new concept international
competition, without forgetting the famous Macau chef
Association with our President Mr. Raimund Pichlmaier, Mr. David
Wong, Mr. Christophe Duvernois, who will take care of everything
concerning our competition,well done guys .
